  4. I remember making an audit system for loading the "correct" things onto the carts for a large catering company out of O'Hare. You would be amazed at how many of those carts it takes.

  7. Trucker Kev The Paid Tourist I found out that the airline gets massive credits for NOT providing exact counts unless it is defined ahead of time and signed off by the crew. My part of the project was using a scanner to hit all of the non refrigerated carts for counting all the SKUs and comparing against the order. I had to post the number of mistakes by region of the flow of carts so management could go over and yell at someone for a count being off.

Oshi Shikigami Plastic will cut the cost of having ground crew wash and cleanse the silverware, then there are all those pesky souvenir folks that out right take your flatware home with them, and paper or plastic trays save the airlines too. I am surprised that you feel they don't do enough for you any more. The cost of a ticket has come way down because of these cost saving moves. It just costs you another ticket practically to take any luggage with you is all.
